Grilled Pineapple Orange Chicken Bowl

If you are looking for a tropical getaway for dinner, then you have come to the right place. Today is your lucky day and magic happens when you grill pineapple. The sugars carmelize and the char just enhances the freshness and experience.
We love to grill fresh cut pineapple slices but for this recipe, I am using the whole pineapple. Literally. Except for the core of course. Presentation is everything. I'd say the hardest part of this recipe was evenly cutting the pineapple in half and then carving the halves into bowls. But it was a good time and I had help. We threw the "bowls" onto the grill and the cut out fruit was also grilled and added to the dish at the end.

So let's get to the point and tell you what you need:
2 cups of cooked rice (yay!)
2 Fresh Ripe Pineapples (cut in half and grilled on high for 8 minutes - open side down as pictured)
Cut Fruit from the Pineapples (grill and set to the side)
La Choy Orange Stir Fry Sauce (14.4 oz bottle)
Oil (2-3 inches in pot)
For the Chicken:
4 Boneless Chicken Breasts cut into bite size pieces
3 Eggs
1/2 cup cornstarch
1/2 cup flour
Poultry seasonings (I know you have your favorite lineup)
Get to it:
1. Start by cooking your rice according to the package directions.
2. Season that chicken!
3. Get the flour and cornstarch in a bowl and mix it. Season that too if you please.
4. Whisk those eggs boo.
5. Dip your chicken pieces in the egg mixure followed by the flour mixture and set it on a plate.
6. Get your oil going (heat to 350 degrees) and let's fry up those chicken pieces. Work in batches. Flip them until they are golden brown all around. Drain.
7. Toss the cooked chicken, grilled pineapple and Orange Stir Fry Sauce together in a pan, just enough to coat all pieces then heat through.
Can you make your own orange sauce? Absolutely. I opted for the bottle because it's more convenient and I have a life. But, if you are feeling ambitious, feel free to make your own sauce.
To assemble your masterpiece, take your grilled pineapple bowl, add a 1/2 cup of rice and top with your orange sauce, chicken and pineapple mixture. You can top it with green onions and sesame seeds if you're feeling fancy.
